After sunset, when the Dolomites glow pink through the windows under the rays of the evening sun – a phenomenon known as ‘enrosadira’ – healthily indulgent, seven-course dinners elevate local ingredients with Michelin flair. Picture dishes like celeriac veloute with thyme espuma and croutons, or veal loin with chanterelle, as well as haute renditions of traditional speckknöddelsuppe, schnitzel and strudel.
As evening comes around, Sensoria’s culinary concept evolves into a fine dining sit-down experience in the main restaurant. From encouraging guests to have the freedom to browse what they fancy during the day, at dinner, Sensoria take culinary leadership with daily changing set menus that champion local produce and South Tyrolean specialities.
